The Master Touch Most chocolatiers create their confections with one type of dark, one white, and one milk chocolate, using generic blends of each. We, at von Euw Chocolatier, work exclusively with Valrhona Chocolates™, renowned worldwide as the best producers of chocolate for the industry. Instead of limiting ourselves to using the basic three, we work with a much more extensive variety. Our chocolates range from a 30% to a 72% cocoa content, each from a different geographic provenance and each having its own unique qualities. We find that the most precious beans originate from small producers in Madagascar, Ecuador, Jamaica, Trinidad, and Venezuela. |
