Philosophy
At von Euw Chocolatier, we believe that not every chocolate is created equal. Cacao beans are like good wine grapes and aromatic coffee beans: they acquire distinct flavors and essences depending on the region from which they originate and the manner in which they are handled. Even after they are harvested, their flavor and quality need to be refined and drawn out.

The Master Touch
Most chocolatiers create their confections with 1 type of dark, 1 white, and 1 milk chocolate, using generic blends of each. We, at von Euw Chocolatier, work exclusively with Valrhona Chocolates™, renowned worldwide as the best producers of chocolate for the industry. Instead of limiting ourselves to using the basic three, we work with a much more extensive variety. Our chocolates range from a 30% to a 72% cocoa content, each from a different geographic provenance and each having its own unique qualities. We find that the most precious beans originate from small producers in Madagascar, Ecuador, Jamaica, Trinidad, and Venezuela.
