Chocolate 101
Welcome to the V E Chocolate information page. Because our quality control standards are high, our Chocolatiers are among the best in the business. Our goal is to always deliver the best chocolates you have ever tasted and seen, since love comes form sight. We want you, our valued customer, to be happy. In order to best serve you, we have attached our introductory questionare, which is a standard questionaire which we ask all of our prospective clients to go through.
Budget, per piece.
By asking this simple question it allows us to narrow down your options in a relatively expedient matter. This does not mean that your budget will limit you to any one product since we have a plethora of options in every price range.
Will you want custom flavors or will you be using our house flavors
If you desire us to create a custom flavor we are more than willing to assist you in creating your very own signature line. This would be an exclusive line to you, and you will retain any and all rights to such a line. Any custom work would incur a R&D fee which would cover the formulation of your recipe and shelf life stability elaboration.
Which type of chocolate would you like to be used in
your brand?
Tier
I Single source Chocolates, i.e. Varlhona.
This is the brand we use for our private brand. Fine chocolates like wines carry distinct
notes and flavors which allow us to match each individual flavor with a
specific type of chocolate from a specific source. Just how wines depend on where they are grown
and the climate associated with this region for their subtle flavors and
nuance’s so does chocolate. Single
sourced chocolate means that unlike the mass produced chocolates each growing
region is kept separate from the other regions from beginning to end preserving
the regions subtle flavors, as well as determining which specific cocoa % is
ideal to enhance these flavors. For
example in order to bring out a coffee flavored chocolate we might use a 66%
cocoa chocolate from the Caribbean which is grown in an area which also grows
coffee. By doing this it allows us to produce a 3 tier
flavor profile, all of which are perceived in three different stages of
consumption, 1 biting the chocolate, 2 savoring the filling, 3 aftertastes left
in the mouth after consumption.
Tire
II Multi sourced Chocolates, i.e. Calebaut. This type of chocolate is simply a
blend of cocoa from around the world independent of region. These manufacturers
range in quality depending on their individual polices. This will tend to lose the individual nuances
of the region; however this can still produce a high quality product, as well
as not so high quality depending on the manufacturing of the product.
Tier
III “chocolate”. This is in quotation
since this is the low end of the spectrum since in some areas it is not allowed
to be called chocolate. This is a low
end product which is manufactured with vegetable shortening instead of cocoa
butter, which is the most expensive part of the chocolate. This produces a chocolate like substance with
a monotone flavor which is very low cost product.
Which type of packaging have you envisioned?
We can help you choose the right packaging which is right for you. We offer everything from a plain bulk box to a full line of customized packaging. However before you get too exited in having a completely customized box keep in mind that such boxes do not become economically feasible until you order over 5000 of them. Luckily we offer a full line of boxes which can be ordered in very small quantities at a very affordable price. If you so desire we can customize a stock box with your name and/or logo for a nominal setup fee.
Organic Vs Conventional
We are more than willing to create your line in an all organic fashion, however you must keep in mind that most of todays chocolate is grown in such a manner while not being certified as such. If you would like fully certified organic chocolate you must consider that this would roughly triple the cost of raw materials.
